  • Dark and rich India Pale Ale dry-hopped with Citra, Chinook Cryo, Simcoe, and Amarillo. Notes of roasted coffee bean, cocoa nib, and slight citrus.

  • Just a “blip” on the hop radar, our take on a low ABV IPA highlights the citrusy, lemon characteristics of Mosaic without overpowering the palate.

    PALE ALE - 4.7%

  • An India Pale Lager inoculated with a custom blend of fruit forward Brettanomyces strains. Aged in neutral chardonnay barrels for a year then liberally dry-hopped with New Zealand Motueka.

    The finished product is bold and fruity with hints of lemon, lime and gooseberry that highlight the characteristics of both chardonnay and brett.

    BRETT IPL - 7%

  • The malt profile is light and simple by design, allowing this beer to finish on the drier side. This creates a super refreshing IPA with loads of hop character. Liberally hopped with Idaho 7, Calypso and Lemon Drop, expect bright pineapple notes paired with spicy, candied orange.

    BRUT IPA - 6.9%

  • Sour brown ale aged in our Ex-Cognac foeder for 1 year with house culture; this wild ale is then transferred to freshly emptied Cabernet Sauvignon barrels for an additional 8 months. This is followed with a copious addition of Cab Sauv grapes, re-fermenting for an additional four months.

    Vinous and full-bodied: crushed berry, sweet black cherry, bright acids

    Cabernet Grape & Barrel Wild Ale finishes with a three month rest, conditioning in the bottle.

    Wild Ale - 10.2%

  • An experimental IPA featuring large Comet and Lotus dry hop additions. The result is something we can’t quickly summize- Oranges:Stonefruit:Vanilla = Delicious. And you’ll have you keep trying it over and over to figure out why.

    NEIPA - 7.3%

  • RIS conditioned on Port City Coffee (Portsmouth) Ethiopian Harrar and Tahitian vanilla bean. Chocolate covered coffee bean.

  • Brewed with cold brew coffee from Port City Roasters and Tahitian vanilla, our Russian Imperial Stout features a velvety smooth mouthfeel paired with a robust, complex flavor profile.

  • Aged in second-use Pinot Noir barrels for one year, this dark wild ale is then conditioned on vanilla, cacao nib, and dried orange peel. Bright citrus acidity intertwines with vanilla sweetness and warming cacao.

    Intricate and resonant: cocoa dusted sour orange

    Elixir Orange Cacao Vanilla finishes with a six month rest, conditioning in bottle.

  • Aged in our Golden Sour Foeder for one year, this wild ale is then re-fermented on pineapple for three months, and finished with ginger root. Pineapple sweetness and ginger heat intertwine with light acidity.

    Elixir Pineapple Ginger finishes with a four month rest, conditioning in bottle.

    WILD ALE - 6.8%

  • NEIPA featuring Centennial Hop Hash, Citra, and Summit. Notes of grapefruit, black pepper with a clean, bitter finish.

  • This dark saison is mysterious in the ways it delivers big flavors. A rich malt character with subtle chocolate notes meld perfectly with the light barrel funk and bright, tart raspberries.

  • This sour red ale was brewed in collaboration with Tributary Brewing in Kittery, ME. Kettle soured and fermented with Selgian Saison yeast, we then aged it in Caledonia gin barrels with a locally-harvested juniper berry tea. The result is a complex, tart beer that is truly unique.

Then, there are times you are flat out inspired and motivated by friends and colleagues: the beer inside this bottle represents just that. Inspiration moves brightly throughout all things if you look at it just right.

    This project came about accidentally, or perhaps coincidentally. Our very good friends, Tributary Brewing Company, were visiting us to collaborate on a project for Portsmouth Beer Week. The project happened to utilize a Tom Cat Gin barrel sourced by our Trib pals-- a barrel that after emptied, had no future trajectory in its short-lived life. Doing what we love to do, we scrambled to fill this barrel with any and all IBU-less beer, along with our house culture to save this lively oak. After a year, we were left with a stunning, botanical, oak-fueled, enamel-peeling, acidic beer. We then back-blended with fresh Saison, and waited for conditioning. It's safe to say the single keg did not last more than a few days, once word spread across the brewery. It was at this moment, we decided we needed to do our best to mimic this seemingly hodgepodge side project and give it legs. We give you: Long Story.

    This Foeder-aged sour red began like many of our mixed culture projects, aging one year in oak with our house culture. From there, it rested for an additional 7 months in Tom Cat Gin barrels, picking up complex botanicals and a firm layer of oak.

  • An incredibly satisfying double IPA that is a bit more malt forward than other examples of the style. Flavorful, smooth and dangerously drinkable, this beer features a massive dry hop of Mosaic and Azacca hops.

    2X IPA - 8%

  • This unnecessarily complex DIPA brings together a Kveik yeast strain with a blend of experimental hops. Yet somehow they work together to create notes of pineapple and grapefruit in a tropical-forward IPA.

    DIPA - 8%

  • Pours a deep amber color with a malty and smooth flavor profile. Dark German lagers are the ancestors of many styles we enjoy today. So join us in tipping a can to delicious tradition.

    MUNICH DUNKEL - 5.7%

  • Fluffy NEIPA featuring Citra, Pacific Sunrise, and Motueka. Notes of pineapple upside down cake and orange marmalade.

  • A New England take on an old British style – The Extra Special Bitter. Like the ESB, NESB is a bit of a misnomer, less bitter than many other American and English ales. This beer has a well-balanced malt profile and a hazy yellow aesthetic. Brewed and dry hopped with large amounts of Galaxy.

    BITTER - 4.7%

  • Rounded NEIPA featuring Citra Cryo, Sabro, HBC630, and Motueka. Notes of starfruit and coconut with hints of lime leaf.

  • Delicate NEIPA featuring Mosaic, Citra, and Strata hops. Crushable and dank with notes of sweet tropical fruits and citrus peel.

  • Two separate mashes were used in the making of this imperial stout. Only the first runnings were used: no sparge. A thirteen hour boil aided in the creation of the pitch black wort, then fermented out with our house yeast in stainless.

    A lower carbonation combined with bottle conditioning, enhances the lush, viscous mouthfeel. Rich and decadent, reminiscent of blackstrap molasses.

    IMPERIAL STOUT - 11%

  • Well this one took a while! This tart sour shares a distant ancestry with Flemish red, but taken in a very, very wild direction. Aged in Pinot Noir barrels for over a year, rested on a blend of sweet and tart cherries before finally being bottle conditioned. The result is a very flavorful sour beer crafted to strike a balance between sweet, tart and utterly enjoyable.

    WILD ALE - 6.8%

  • Light and refreshing, our golden ale is dry hopped with German Hüll Melon hops. This imparts bright notes of ripe fruit, cantaloupe, and honey dew melon for the ultimate thirst quenching beverage.

  • Wild Ale aged one year in oak with our house culture: cold-steeped with White Heron African Rooibos tea, hibiscus flower, and lemon zest.

    Rustic fruit punch: sour cherry, sweet red fruit, complex botanicals.

    Repose Hibiscus Rooibos Lemon finishes with a three-month rest, conditioning in the bottle.
